Famous Park Grill Steakhouse Recipes

Park Grill Steakhouse P-KAN CHICKEN
Yields: Four 6 oz. chicken breasts

Ingredients

  • 4pcs. 6 oz. boneless skinless chicken breasts
  • 1cup plain yogurt
  • 1cup fat free Italian dressing
  • to taste salt
  • to taste ground white pepper
  • to taste nutmeg
  • 1/2 cup flour
  • 3 each eggs
  • 1/2 cup milk
  • 1/2 oz. Jack Daniels
  • 1 cup crushed Captain Crunch
  • 1 cup Japanese or dry coarse bread crumbs
  • 1/2 cup toasted pecan pieces; almost crushed

METHOD
Blend yogurt with Italian dressing; immerse breasts into mixture and refrigerate covered overnight; blanch breasts in pre-heated oven (350 degrees) @ 10 minutes not quite cooked all the way and very moist; cool to room temperature; conbine toasted pecans, Captain Crunch and bread crumbs, hold nearby; season flour with salt, pepper, and nutmeg, then dredge both sides of breasts; whisk eggs, milk, and 1/2 oz. Jack Daniels together and soak floured breasts in this @ 4-5 minutes; remove and press both sides of all breasts into the breading mixture until thoroughly coated; may be necessary to repeat this.


ROCKY TOP MUSHROOMS
Serves 4 people

Ingredients

  • 2 lbs mushrooms,sliced 1/4 inch
  • 1 stick butter (unsalted or salted)
  • 1 tbsp seasoning salt
  • pinch crushed red pepper
  • 2 cups Sherry

METHOD
Combine in saucepot; simmer on medium heat until desired doneness.


Park Grill Steakhouse MAPLE BUTTER

Ingredients

  • 1/2 # sweet butter, softened
  • 1/2 oz pure maple extract
  • 1/2 cup dark brown sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • pinch salt
  • pinch cayenne pepper

METHOD
Place all ingredients in mixing bowl; whip at low speed initially, gradually increasing to fast until all ingredients are evenly distributed and butter is light and fluffy.
